Chocolate cup cake
蛋糕糊材料~
蛋黄-6粒
细砂糖-40gm
无盐奶油-70gm
牛奶-80ml
低筋面粉-120gm
巧克力粉-10-15gm
(把低筋面粉和巧克力粉一同过筛备用)
分量大概可以做纸杯18个
烤箱180度预热20分钟

蛋白-6粒
细砂糖-80gm
做法~
1)牛奶隔水加热(不需要滚冒烟就可以了),然后加入细砂糖,无盐牛油拌溶解就可以离火。
2)把逐粒蛋黄加入快速拌匀,然后分两次加入已经过筛的粉拌匀。拌匀后要把面糊盖好备用。
3)蛋白打至细泡泡把砂糖分3次加入,打至湿性发泡。
4)把打好的蛋白用刮刀刮3/1加入面糊里,用切割法拌匀再把拌好的面糊倒入回剩下的蛋白里一样用切割法拌匀。
5)把拌好的面糊倒入纸杯到8分满,送入烤箱以150度烤25分钟或至熟。
温馨提示~
还不确定是否熟透可以用牙签插入蛋糕体中间,牙签拔出没有面糊沾就代表熟了。每个烤箱温度都一样要自己拿捏。
