210gr plain flour
130gr fine sugar (i use 110gr only)
1tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
225gr mashed very ripe banana (without skin)
54gr vegetable oil(i use melted butter)
60gr fresh milk
1tsp vanilla essence
Preheat oven to 190c.line 10 large or 12 regular size muffin cups.
In large bowl, sift flour, sugar, baking powder, baking soda and salt.
In medium bowl , mix mashed banana, egg, oil, milk and vanilla essence with fork until smooth. Stir into flour mixture mix until flour is moistened.
Divide batter evenly among muffin cups.if u have spare banana, place a slide of banana on muffin to bake together. Bake 20 to 25 min or until light golden brown and toothpick inserted in centre comes out clean . immediately remove muffin from pan to cool on track.
