Mango Cotton Cake
Here is the simple recipe to share from / by Neo Sook Bee
Mango Cotton Cake
35g salted butter
50g top flour or cake flour
60g mango purée
3 egg yolks
1 whole egg
3 egg white
Pinch of salt
6" cake pan
65g each egg with shell
A) Melt the butter over heat. Once melted, remove from heat and stir in flour and mix well immediately. Set aside and let it cool down.
B) Still and mix 3 yolks, 1 whole and the purée together. Add the mixture to A and combine well.
C) Whisk egg white with salt until big bubbles formed. Add in sugar in 3 batches until stiff peak. Gently whisk 1/3 egg white mixture in egg yolk batter. Gently whisk in the remaining egg white and fold and check everything is well combined.
D) Pour into lined cake pan (do not grease). Gently tap the cake pan on the table to get rid of big air bubbles. Bake at lower rack 170 deg upper heat for 40 min using water bath. Lower to 150 deg upper and lower heat for 40 mins ( baking temperature and time duration adjust accordingly to your oven's performance).
E) Invert and let cool.
