Cocoa Coffee Cotton Cake by Neo Sook Bee

Ingredients
40g corn oil
50g cake flour
50g milk
3 egg yolks
1 whole egg
1g salt
3 egg white
40g sugar
Dissolve 2 tsp coffee powder and 1 tsp cocoa powder in 3 tsp hot water
6" cake pan
Method
A) Warm up oil and remove from heat. Stir in flour and mix well immediately. Set aside and let it cool down.
B) Still and mix 3 yolks, 1 whole egg and salt. Add the mixture to A and combine well.
C) Whisk egg white and sugar until stiff peak. Whisk in gently 1/3 egg white mixture in egg yolk batter. Gently fold in the remaining. Lastly, add in the cocoa coffee paste and use your spatula and draw pattern.
D) Pour into a greased and lined mould. Gently tap the cake pan on the table to get rid of big air bubbles. Bake at lower rack 170 deg upper heat for 40 min using water bath. Lower to 150 deg upper and lower heat for 20 mins. ( baking temperature and time duration adjust accordingly to your oven's performance).
E) Invert and let cool.
