Banana CupCake

- 150g Butter (softened)
- 230g Caster Sugar
- 300g Plain Flour
- 2tsp Baking Powder
- 2tsp Cinnamon powder (optional)
- 2 Large eggs
- 4 Bananas (Mashed)

Steps:
1. Preheat oven to 180C (160C if Fan Force)

2. Beat butter and sugar till pale then add in egg one at a time and mix well

3. Sift flour, baking powder, cinnamon powder and add into the mixture.

4. Mix well then add the mashed bananas and stop after mixed in.

5. Line a 9" round baking tin/spring form with parchment paper and pour the mixture in.

6. Bake for about 45minutes or till skewers come out clean when inserted into thickest part of the cake.

7. Remove from oven, leave cake in tin for 10mins then unmould and cool on wire rack.


Key: You can make cupcakes with any cake recipe, just cut the baking time to 18mins if using muffin tins and 15mins for cupcakes
