三杯鸡 - By Karen Ho-Chan




 三杯鸡。Direct translation - 3 cup chicken.

recipe:

40ml Sesame oil
60gm ginger
50gm garlic cloves
1/2 chicken (about 550gm), chopped into bite size
1 red chilli
60ml rice wine
30ml light soya sauce
30gm soya sauce paste
10gm sugar
100ml water
15gm fresh basil

Method

1) Heat sesame oil in a wok, add in ginger and garlic and fry until brown. Remove and set aside.

2) In the remaining oil, slide in the chicken pieces and fry until golden and cooked through. Remove and set aside.

3) In the remaining oil, fry red chill until fragrant, and then tip in the ginger and garlic. Give it a good stir, and then add in the chicken, rice wine, soya sauce, soya sauce paste, sugar and water. Let the mixture bubble, until liquid reduce slighty, and then add in the basil. Give it a final stir and serve hot ith white rice.

**SOYA SAUCE PASTE - I don't know what's this actually. Hence, I increase the amount soya sauce and add a few tsps of dark soy sauce for colour.
