Orange pound cake with walnut - by Geok Lian Chua

Orange pound cake with walnut.

5x8" rectangle pan or 7"x7" square pan
120g unsalted butter (I use salted)
120g fine sugar (I reduce to 90g)
120g plain flour
2 large eggs (60g each)
1 tsp baking powder
Pinch of salt
1tbsp orange juice
Zest of 1 orange

- cream butter and sugar till pale and fluffy
- add eggs 1 at a time, make sure each egg is fully beaten in before adding the next.
- beat in flour, orange juice and zest alternatively; that is beat half flour, then beat zest and juice, finally beat in rest of flour. Take care not to over beat.
- bake in 180 deg C preheated oven, 30-40 mins (depends on the shape of your pan) or until golden brown and skewer comes out clean.
- for the walnut, actually optional. I added about a handful of chopped pre-roasted nuts into the batter, and sprinkled some on top.

*enjoy baking.
