Durian Cheese Cake wif Durian mousse decoration - by Cindy Chee Yit Fuen

 
Durian Cheese Filling: 
Beat 300g cream cheese until smooth. 
Add in 400g Durian Flesh (blend it) and mix it well. 
Double boil 20g of gelatine powder with 25ml of water. 
Pour the gelatine into the cream cheese mixture. 
Whisk 500g of whipping cream till soft foam. 
Fold the whipped cream into the durian mixture. 
Pour filling into prepared tin. 
Chill in fridge.

Durian Mousse: 
Gelatine Powder 10g mix with 25ml water and double boil it,  leave aside. 
Double boil 200g of durian flesh and stir in 20g castor sugar. Stir till the sugar dissolved. 
Add in 1 egg, stir mixture till hot. 
Add in gelatine and mix well. 
Transfer to ice cold water to cool mixture. 
Whisk 200g of fresh cream till firm. 
Fold the whipped cream into the durian mixture. 
Pipe the cream on the tart and decorate as desired.
