Simple Homemade Pancakes w/Chocolate Syrup & Strawberry Roses - By Ashley Machado Medeiros

Anyone can buy flowers, a card, or make reservations, but there is no
better way to show Mom how much you love and appreciate her than by
making her breakfast in bed and having a warm family snuggle.
Chocolate Syrup Ingredients:
1/2 cup brown sugar
1/2 cup granulated sugar
1/3 cup cocoa (or cacao) powder
1 pinch course sea salt
1/2 tsp corn syrup (optional)
1/3 cup cold water
1 tbsp pure vanilla extract
Chocolate Syrup Directions:
1. In a small saucepan, mix all ingredients except for vanilla extract.
2. Heat mixture on high and continue to whisk until all ingredients come together into a syrup and liquefy (approximately 5 minutes of continuous mixing).
3. Add vanilla extract, mix and transfer to a mason jar or squeeze bottle.
*Not only is this syrup great for pancakes, but you may also use it in coffee (mocha), frappuccinos, desserts, and in your milkshakes too.
Pancakes Ingredients:
1 cup quick oats, milled in blender (or whole wheat flour)
1 cup all purpose flour
1 ½ tbsp baking powder
2 tsp baking soda
1/4 tsp salt
1 ½ tbsp brown sugar, or granulated sugar
1/4 tsp cinnamon
2 Eggs
2 cups milk; almond, coconut, or buttermilk
2 tbsp butter, melted (or coconut butter/oil)
1 tbsp pure vanilla extract
12 strawberries, garnish or chopped
1/2 cup milk chocolate chips, garnish
Pancakes Directions:
1. Preheat skillet or griddle.
2. In a large glass bowl mix oats, flour, baking soda and powder, salt, sugar and cinnamon.
3. In a small bowl lightly whisk eggs, milk, melted butter and vanilla extract.
4. Add wet ingredients into dry ingredients and whisk.
5. Microwave the batter for 2-3 minutes and whisk again.
6. Spray skillet/griddle with butter/oil and spoon batter onto griddle. When air pockets stop forming and “popping” flip over. Heat for a few minutes, until sides lightly brown and serve.
7. Garnish with strawberries and chocolate chips, drizzle chocolate syrup over top.
