Lian Chi Suan ( Lian Zi Gen ) - by Yeo Kim Hong


100g lotus seed (soak in hot hot water for half hr wash n split put to steam for 25-30 mins ) 
90g sugar, 
3 1/2 bowl water, 
pandan leaves n sweet potato flour or potato starch for thickening . 
Melt 1/2 of the sugar in a dry stainless steel pot melt on slow fire until golden brown ( but not burn) add in water( don't put ur face too near or else u get ur face burn) put in pandan leaves and bring to boil add in sugar lefted can replace with taikoo sugar. 
Mix potato starch with little water to made thickening pour slowly n stir until the right consistency . Add in steamed lotus seed 、Serve it hot.
