Carrot Cake.

 Dry ingredients
175g cake flour
1 tsp cinnamon powder
1 tspn baking soda
¼ tsp salt
A handful or 2 of raisins

Wet ingredients
2 Large eggs
135g caster sugar
½ teaspoons vanilla extract
160ml canola oil
320ml grated carrots (about 2 carrots)
160ml grated apples (about 2 apples, squeeze out some of the juice if the apples are juicy)

Directions
1) Sift flour, cinnamon powder and baking soda.
2) Whisk eggs, sugar, vanilla extract and salt.
3) Drizzle the canola oil.
4) Fold in the dry ingredients.
5) Fold in the grated carrots and apples.
6) Bake at 175C for 35-40 minutes.

Note: Perfect with cream cheese frosting and orange zest.
