Oreo cheesecake with overloaded of mini Oreo cookies - by Sara Pang

250gram Oreo
100gram butter soften
600gram cream cheese soften to room temp

1/2 cup sugar
1 tsp vanilla essence
3 eggs (60gram each)
200ml whipping cream
2 tablespoon yoghurt
2 tablespoon of flour
3 tubs of mini Oreo

Put Oreo(without cream) into processor and pulse process till fine crumbs. Mix the Oreo crumbs and butter well and press into 10" springform pan (lined with baking sheet). Bake at 180C for 15mins.
Preheat oven at 160C. Whisk soften cream cheese with sugar until light and fluffy. Add vanilla and mix well. Add flour and mix well. Add egg one at a time and mix well. Stir in whipping cream and yoghurt. Pour into pan with biscuit base. Randomly put the mini Oreos on top. Slightly press in and make it as irregular as possible. Bake at bottom rack for 60-95mins or until it's firm when touched.
