Banana Rum Cake
180ml vegetable oil
180g castor sugar (i used 140g coz the ripe banana is already very sweet)
2 large eggs, slightly beaten
250g plain flour
1tsp baking powder, 1tsp baking soda
220g bananas mashed
50ml milk, 2tsp rum or 1/2tsp vanilla extract
Preheat oven at 175/180
Large bowl mash bananas with a fork. Leave some chunks if u want bits of banana in ur cake
Add egg, milk, sugar, oil, rum or vanilla extract & combine using a whisk
Separate bowl, sift flour, baking powder, baking soda, give a quick mix
Add dry ingredients to wet ingredients and whisk gently to combine (dun overwhip, it will introduce air into batter)
As long as no traces of flour remains u r ready to bake.
Pour into lined/greased 8" round tin
Bake at 175/180 for 50-60 min or until skewer comes out clean.
Abv all dun need machine to whisk juz using hand whisk and viola its all done, quick and easy. If kiddos is having omit the rum and substitude it with vanilla extract.
