Ingredients
•120g Self Raising Flour•120g Unsalted Butter
•110g Icing Sugar
•2 Large Eggs
•1tsp Vanilla Essence
•3tsp instant coffee powder
•Nutella
Method
•Preheat Oven to 170oC
•Cream Butter & Icing sugar till pale & fluffy
•Beat Eggs & Vanilla, add into Butter slowly
•Whisk till fluffy again, add in sieved flour & coffee powder, mix well
•Scoop 1tsp Batter into casings then drop in 1tsp nutella then cover with batter till 2/3 full
•Bake for 20-25mins, Or insert a toothpick & comes out clean.
•Remove & cool completely before piping Icing
Icing
•50g Unsalted Butter
•60g Icing Sugar
•60g Corn Flour
•1tsp Instant Coffee Powder
•20g Cocoa Powder
•1tsp Milk ( if icing is too dry )
Method
•Cream Butter till pale & fluffy
•Add in Icing Sugar & Corn Flour
•Whisk well & scrape into a piping bag
•Pipe Icing onto cooled cupcakes & deco
