Achar - by Yeo Kim Hong


Achar
Ingredients :
2 cucumbers
2 carrots,
2 chillies,
1 pineapple,
3 shallots,
3 garlics,
1 tbsp chilli paste, (Any chilli paste can be use)/( I grind my own chilli paste)
1 tbsp turmeric powder,
3 tbsp roasted sesame seed,
3 tbsp roasted peanut,
3/4 bowl rice vinegar 
3/4 bowl sugar.
 
 
Method:
cut pineapple into small cube & squeeze juice out.
Cut cucumber n carrot into strips & season 1 tsp salt each for abt 20 mins then squeeze the juice out ( don't wash after squeezing).
Fragrance chopped shallot & garlic in 3 tbsp oil then
add in chilli paste & turmeric powder fry awhile
then add in sugar & vinegar,
turn off fire once it boil & put to cool.
Add in peanut, sesame, pineapple , cucumber , carrot & chilli stir evenly.
Keep in glass bottle or earthen ware it taste nicer the next day & can keep for a week or more.
