No Bake Lemon Cheesecake
(Recipe modified from 冰雨恋)

Oreo 饼干 150g (除馅料)
无盐奶油 80g

饼底做法:
1. 奶油隔水煮融
2. oreo饼干用食物处理机打成沙沙的
3. 把(1)加入(3)。搅拌均匀。
4. 把做法 (3)倒入7寸活动模,压平,放进冰箱冷藏备用。

Philadelphia Cream Cheese 250g
原味Yogurt 140g
柠檬汁 45g
动物性鲜奶油 150g
糖80g
鱼胶粉 13g 加入热水 3〜4tbs, 备用

Cheese 糊做法:
5. Cream Cheese放在室温让它软化。然后放在大碗中,加入糖,yogurt,柠檬汁一起搅拌均匀。
6. 溶化的鱼胶粉倒入芝士糊搅拌均匀。
7. 打发动物性鲜奶油至浓稠状 (切勿打到挺,只要变成浓稠带缓慢流动状态即可),加入cheese糊里搅拌均匀。
8. 搅拌均匀cheese糊和打发后的鲜奶油。
9. 倒入(4)的7寸活动模,冷藏最少4个小时或隔夜

柠檬酱材料:
A:
鸡蛋 2粒
幼糖 60g
柠檬汁 65g
柠檬皮屑 1粒

B:
牛油 45g

柠檬酱做法:
1.把(A)全部材料倒入小锅里混合。
2.用隔水方式搅拌煮至松发浓稠。
3.然后离火加入(B)搅拌均匀,待冷却备用,盖上保鲜纸。
4.把柠檬酱淋在脱模后的cheese即可。
