wholemeal bread - by Neo Sook Bee


Actually I had posted my way of doing bread yesterday by baking a cake pan bread if you have noticed.

I am using KA stand mixer. This is my way of doing and have been using this way for some times. Might be different from others.
Recipe adapted from Caroleasylife - Milk Loaf http://youtu.be/PCzyeyJ6ApQ

Ingredients:
1/2 tsp salt
250g bread flour
30g wholemeal flour
(or you can use 280g bread flour)
2 tbsp caster sugar
3/4 tsp instant yeast

180ml fresh milk
2tbsp veg oil or 30g butter

Direction:
Put all your dry ingredients in your mixing bowl accordingly. Turn on mixer to the lowest speed and combine them well.
Add in milk and let it run for 3 mins till a round dough is formed. Increase speed to 4 and knead for 10 mins.
Add in oil and knead for another 2 mins.
Total time of mixer running is 15 mins.
Stop the mixer and use your hand to make your dough a round shape. Put it back to the bowl, cover with cling wrap and let it sit (I put it in the microwave) for 1 to 1-1/2 hour or till it doubled in size.
Lightly flour your table and dough, use a roller to get the air out of the dough. Shape it to fix your bread pan.
After shaping, put it in the centre of your pan. Spray water on it. Let it rise (I put it in microwave) for another 1 to 1-1/2 hour or it becomes doubled its size.
Bake in a preheat oven at 350°F for 25 mins at lower rack.
When it is done, remove from the pan at once, brush melted butter on top and let it cool completely on the wire rack before keeping in air tight container.
