Pan-fried Spring Onion Pancake. - by Jenny Lim

450g flour (i used plain flour)
150ml hot water
150ml cold water

1/2tsp salt
2tbsp oil
1 cup chopped spring onions only the green part mix with pinch of salt
Add hot water and flour in mixing bowl mix well. Add cold water salt and oil and knead to become dough. Cover with cling film and leave for 30min. (Fyi i'm using hand to knead u can use ur mixer to knead it too)
2. Divide dough into 80g each and round them up. Leave for 10min.
3. Roll out dough on lightly flour work surface to 15cm round. Brush with oil and sprinkle spring onion. Roll the dough into a cylinder.
4. Holding both ends of the dough and twisting ur hands in opposite directions then coil into a round disc. Pressing dwn with ur hand.
5. Using a lightly flour rolling pin roll out again to 15cm round. Repeat steps until all ingredients used up.
6. Heat up 2tbsp of oil in non stick pan. Pan fried pancake both sides till golden brown and crispy.
