2 oz self raising
Pinch of salt

1 tsp rice flour
2 eggs
2 oz caster sugar

1. Sieve flour n salt.
2. Whisk eggs till frothy n then add sugar n continue 2 whisk till very stiff (test by forming a figure 8 on the mixture).
3. Gently fold in the flour, using a tablespoon.
4. Heat n grease the mould. (I only greased once n never have 2 grease on subsequent process).
Spoon mixture into mould , then cover n cook till brown on the top n bottom. Make sure u use the lowest flame possible 2 prevent them from being burnt.
6. Lift off the kuih using a toothpick, then repeat the process until all the mixture has been used up.
7. When cold, store in air-tight tin.


 That's the improvised cover sitting perfectly.
