Crumble Banana Yogurt Muffins:- by Ng Mee Teng


Easy Crumble Banana Yogurt Muffins:
Crumble:
60g Castor Sugar

90g Plain Flour
60g Butter - diced
- Mix all the ingredients & rub with hands till it become bread crumbs. Set aside for later use.
(A)
120g Melted Butter
100g Brown sugar
2 nos Eggs - lightly beaten
150g Plain Yogurt
- Mix all ingredients in a bowl & stir till well combined with a wooden spoon.
(B)
250g Plain Flour/Cake flour/ Superfine Flour
2 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Cinnamon (optional)
A pinch of salt
- Sift all ingredients in a bowl.
(C)
4-5 Bananas - diced into cube or slice

- Add (B) into (A). Stir till well combined.
- Add (C) & mix well.
- Pour into muffins liner till 3/4 full & sprinkle with crumble.
- Bake at preheated oven at 180 Celsious for 20-25 mins.
