Cooking AYAM PENYET Indonesian fried chicken with sambal balacan
Sambal Ayam Penyet ingredients:
- 1 Tbs palm sugar
- Basil leaves
- 2 pcs limes halved
- 1/2 pcs tomato
- 1/2 tsp balacan
- 1/2 tsp salt
- 1 pcs garlic
- 6 pcs red chilli
- 5 pcs red chilli padi
- 3 pcs shallot
Main ingredients:
Chicken cut into 4 pcs
Fried chicken process:
Sambal process:
Chicken cut into 4 pcs
- 2 ply of bay leaves
- 300 ml water
- Frying oil
- Blend the spices
- 3 cm ginger
- 3 cm gallanga
- 1 1/2 tsp salt
- 4 pcs garlic
- 1/2 tsp coriander powder
- 1 tsp turmeric powder
Fried chicken process:
- Marinade chicken with the blended spices and add water and bay leaves,
- Cook until the chicken softened. Keep aside.
- Deep fried the chicken till cooked.
Sambal process:
- Stir fry shallot, garlic, chilli and tomato in a little oil.
- Put into balacan, salt and sugar together then blend them.
- Squeeze the lime and mix the basil leaves into the sambal.
- Top the fried chicken with the sambal.
- Braise the chicken so the sambal can be absorb.
