Brulee Cheesecake - by Ng Mee Teng

Brulee Cheesecake Recipe (8" Round)

Base:

120g Digestive biscuits - finely crushed
1/2 cup Castor Sugar
60g Butter, melted

Filling:
500g Cream Cheese
1/4 cup Castor Sugar
1 tbps Lemon juice
Zest of 1 small lemon
1 tspn Vanilla extract
2 large eggs

- Preheat oven to 165 Celsius.
- Base: combine crumbs, sugar & butter. Press mixture evenly onto bottom of springform round tin. Bake for 5 mins.
- Filling: combine cream cheese, sugar, juice, zest & vanilla in electric mixer, mix on medium speed till well blended.
- Beat in eggs one at a time, mixing thoroughly after each additional.
- Pour over base & bake for 25 mins. Cool before removing fr tin. Chill in the fridge.
- Remove fr fridge & sprinkle top evenly with castor sugar. Scorch the top with blow torch.
