Carrot Cake with Cream Cheese Frosting
Carrot Cake
Ingredients:
300g soft light brown sugar 
3 eggs
300ml sunflower oil
300g plain flour
1 tsp bicarbonate of soda
1 tsp baking powder
1 tsp cinnamon powder
1/2 tsp ground ginger
1/2 tsp salt
1/4tsp vanilla extract
300g carrots , grated


Method:
1. Preheat oven to 170 deg C
2. Put Sugar, Oil and eggs into bowl with paddle attachment and beat till well incorporated
3. Slowly add in the rest of the dry ingredients till well mixed
4. Add in carrots and mix till evenly dispersed
5. Divide the mixture into 2 8" pans and put into oven to bake for 30-35 mins .
6. Cakes are baked with a skewer comes out clean
7. let the cakes cool slightly in the tins before turning them out onto cooling rack to cool completely

Cream Cheese Frosting:
500g Cream Cheese
2 2/3 cups Icing Sugar
228g unsalted butter
2 tsp Vanilla extract
2 tbsp milk

Method:
1. Beat softened cream cheese and butter till well mixed.
2. Add in vanilla extract and milk and beat
3. Add in the icing sugar using a spoon and beat till all well incorporated.
4. Use immediately or chill to use later.
